Recipes which span for generations, recipes that cross continents, recipes that adapt and evolve in one’s own kitchen. Each recipe with a history and a story.

    While sitting around a table with friends a few weeks back our conversation turned to holiday baking. In typical fashion for our area, most had plans to start off the season by making large batches of lefse. We discussed favorite cookies, like pepperkaker (gingerbread), kransekake (almond tower cake), and krumkaker (wafer cookies), to name a few. One friend, Anne Lise, turned to me, and with a broad smile and glitter in her eyes, told me that one of her favorite julekaker (Christmas cookies) is knekk-kaker. (more…)

The time when the leaves unravel and expand, while hidden under their canopy are long stalks of bright pink, deep crimson and earthy green. That excitement of a year-long wait to enjoy a slice of homemade rhubarb pie, a bowl of rhubarb soup, a hot rhubarb crumble, a fresh stalk dipped in sugar, a tangy pickled rhubarb slice or even a glass of rhubarb wine.

    Snipp - Norwegian 'collar' cookiesMy sister recently collated and copied my Great Grandmother’s recipes as gifts for the whole family. Reading through the recipes brought back so many wonderful memories. Her cookies were always a highlight of our holiday traditions. Cookies that, today, seem classical and perhaps a bit vintage. Something our grandmother grew up with and baked for us in our childhood, but we rarely, if ever, bake in our own kitchens.

    Not long ago, I was visiting a friend here in Numedal, and she served me coffee with a side of snipp. I certainly had never come across it and neither had my Norwegian husband. It’s one of those pillowy & soft sugar based cookies, with a sweet cloud of cardamom and cinnamon aroma surrounding it. It’s simplicity at its best and perfect with a cup of tea or coffee.
